Cold-smoked sturgeon fillet. Fantastically delicious fish known since ancient times. We smoke fish 2 times a week. For author’s smoking we use old family recipes and put our heart and soul into the process. Our family traditions enable us to maximise the gastronomic qualities of each type of fish.
Cold-smoked sturgeon fillets are an unmistakable garnish to the most exquisite festive table. Sturgeon has a unique taste, a pleasantly dense texture, a delicate smoked aroma, and no bones. Even those not yet familiar with cold-smoked sturgeon will instantly fall in love with this fish, and if you serve it to a connoisseur, they are sure to experience gastronomic bliss. This fillet is made only from sturgeon raised in clean running water. The process of smoking and maturing is very complicated. In ancient times Caspian fishermen even built towers 10 meters high for cured sturgeon fillet maturing. It is easily sliced with a sirloin knife into crosswise slices, and served as a gourmet snack or used on toasts or sandwiches. Smoked fillets vary in weight from 350g to 700g.
