The cold-smoked salmon fillet is considered a classic piece. Based on the unique recipe preserved by the Polezhaev family for generations, we smoke it twice a week on apple and beech wood chips, whose smoke permeates the fish fibers for hours. Our traditional techniques allow us to maximize the gastronomic advantages of our products.
The artisan cold-smoked salmon is praised in odes, but if you’ve ever tasted it, you know the fish’s splendid and rich flavor. Cold smoking is a slow process that gives the fish a smoky taste, keeps its flesh firm, and provides a slightly oily texture. It can offer an unforgettable experience on its own, but it also pairs well in salads, sandwiches, or even as a sandwich spread. Although the smoke has a preserving effect, the fish should still be stored in the refrigerator.
