Shashlik of sturgeon fillet. The meat combines nice juiciness and tenderness, but it’s also firm enough to hold up perfectly on skewers. We use an old family recipe for the author’s marinade and put our heart and soul into the process. Our family traditions enable us to use all the gastronomic advantages of each kind of fish. Marinated sturgeon fillet shashlik takes an undeniable place in gastronomy. The sturgeon meat is moderately dense, not falling apart from the skewers, very very juicy and not greasy – it will please barbecue or charcoal grill lovers. Shashlik of sturgeon on skewers is faster to prepare than from meat, therefore the family or guests will appreciate this insanely delicious dish mentioned in many noblemen’s and hussar’s epics. We marinate according to our family’s old recipe: white dry wine, olive oil, onions, Provencal herbs, bay leaf, peppercorns.

In addition to the charcoal grill, it can also be cooked at home and the pieces of shashlik can be placed on a hot pan (preferably with grill strips)
