Kaluga is rightfully called the “Far Eastern Beluga” by the Far East, in nature it can reach 5.5 meters and can be found even at a depth of 50 meters. Nowadays, Kaluga caviar is obtained from a hybrid of Kaluga and Amur sturgeon. Kaluga produces large, powerful roes, while Amur sturgeon reduces its growth rate from 20-25 years to 11-12 years. Beluga connoisseurs should certainly try Kaluga caviar, which is in no way inferior in size and organoleptic parameters. Its lesser popularity is determined only by the fact that in the 19th century there was not the slightest opportunity to establish its logistics to the central part of Russia or to Europe.
