Cold-smoked salmon balik. Very flavourful and rich taste. We smoke fish 2 times a week. For author’s smoking we use old family recipes and put our heart and soul into the process. Our family traditions enable us to maximise the gastronomic qualities of each type of fish.
Salmon is considered to be one of the most delicious salmon fish. And when cold-smoked, it surpasses all expectations. The slightly salted, aromatic slices melt in your mouth. Thanks to its fat content, it provides our body with healthy, fat-soluble vitamins and omega 3. But there is a production secret – only very large fish of more than 9 kg are suitable for “salmon” salting. Smoking removes excess moisture, seals the meat and enriches the taste. Especially pronounced is the divine aftertaste and pre-aftertaste, which experienced gastrocritics call “umami”. Serving this fillet is very simple, the fish is sliced at a 45 degree angle and served as a standalone appetizer, as slices for snacks and sandwiches, as a topping for salads or as a base for rolls. Some slices can be lightly sprinkled with dried dill or a little freshly ground black pepper for a different flavour.
