Cold-smoked sturgeon balik. We smoke the fish 2 times a week. We use a combination of applewood and beechwood chips. For author’s smoking we use old family recipes and put our heart into the process. Our family traditions enable us to maximise the gastronomic qualities of each type of fish.

We use an Astrakhan recipe and put our heart and soul into the smoking process. The meat is not greasy, dietary. The weight of one smoked balik varies from 3kg to 5kg.
